Newest Riverside Food Lab Tenant Will Offer Acai Bowls, Aguas Frescas, and Popsicles

The Riverside Food Lab has announced another new tenant: Bolcupop.

Entrepreneur Sallimar Lorenzana, a Corona native who started her own food truck and delivery business, will serve acai and corn bowls (which accounts for the “bol” part of the name), aguas frescas (the “cup” part) and popsicles (the “pop”). The Food Lab stall will be her her first brick-and-mortar location.

Bolcupop will join pizza place Bricks and Birch, dessert waffle-maker Sweet Combforts and BeerFarm, which will offer a selection of craft beers, in the food hall next to Riverside’s Fox Performing Arts Center. It’s expected to open in early 2018 with 14 tenants.

Food Lab developer Arteco Partners also recently signed a deal with Riverside to create Chow Alley, an outdoor dining space that will host food vendors, events and entertainment.
